Over the past two months we've enjoyed a feast of good North American food - steak, berries, ice cream, pies, ice cream, corn on the cob, did I mention ice cream. Arriving back in Uganda brought a hankering for one of our Ugandan favourites - matoke. A green banana which when peeled and cooked in banana leaves over the fire is absolutely delicious served with beans, g-nut sauce etc. Last Saturday we couldn't resist buying some at the market. After peeling it, we took it to our family group where the David family girls cooked it to perfection.
